Daniel Patterson, chef at the two-Michelin-starred Coi in San Francisco, will eliminate tipping at Aster, his soon-to-open restaurant in The Mission, in favor of a European-style “service-included” policy.
This will mean that means the restaurant, not the customers, will be able to decide exactly how much waiters are compensated. And the service charge will also allow Aster to better compensate cooks, dishwashers, and other employees who often make less than the service staff due to regulations on how tips are distributed. This is all a very big win for everyone.
