cesar ramirez will start charging $185 per person for his twenty-course, seafood-centric, BYOB meals at brooklyn fare in june. That’s a 12% hike from the current price of $165, a 37% hike from the $135 he was charging in january, and 95% hike from the $95 he was charging in 2009. these regular increases are a wise move to help create a little more slack in demand, especially after yesterday’s three-star review by the new york times. the two michelin-starred brooklyn fare seats just 18 people every night and usually books up 6 weeks out. the big question, as sam sifton and others have asked, is how much we’ll end up paying when a wine license is secured this summer, and how that will affect the value equation. definitely still a STRONG BUY (source for price hike: brooklyn fare)
