That’s the emailed I received from “Cajun Caviar King” John Burke when I inquired about his bowfin roe ($75/5oz). My request, of course, came after Susan Saulny of The New York Times penned her excellent profile of this cheaper alternative to sturgeon caviar. And while I was quoted in that article as a skeptic of the people’s caviar, I can’t say I wasn’t intrigued by how bowfin roe might taste. Looks like I’ll have to wait until next winter. There you have it folks. Cajun Caviar is sold out. For now, we’ll have to make do with the fine farmed sturgeon roe coming out of California ($95/50g), Florida ($129/50g), Israel ($130/28g) and China ($205/50g). Or here’s another source for bowfin, if that’s how you roe roll.
